Chicken:
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Rice:
- 1 cup long-grain white rice (uncooked)
- 1 3/4 cups chicken broth
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon dried dill
- 1/2 teaspoon paprika
- 1/2 cup chopped red onion
- 1/2 cup chopped fresh spinach (optional)
Garnish:
- lemon slices and fresh parsley for garnish
Instructions
- Preheat the Air Fryer: Preheat the air fryer to 375°F (190°C).
- Season Chicken: Mix olive oil, oregano, garlic powder, onion powder, salt, and pepper. Rub the mixture over the chicken thighs.
- Prepare Rice Mixture: In an oven-safe baking dish, combine rice, chicken broth, lemon juice, lemon zest, dill, paprika, red onion, and spinach if using. Nestle the chicken thighs on top.
- Cook: Cover the dish with foil and air fry for 30 minutes. Remove foil and continue cooking for 10–15 minutes until chicken is cooked through and rice is tender.
- Garnish and Serve: Garnish with lemon slices and parsley before serving.
