For the Goulash:
- 1 tablespoon olive oil
- 1 medium yellow onion (diced)
- 2 cloves garlic (minced)
- 1 pound ground beef
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon tomato paste
- 1 (15-ounce) can tomato sauce
- 1 (14.5-ounce) can diced tomatoes
- 2 cups beef broth
- 1 cup elbow macaroni (uncooked)
- 1 cup shredded cheddar cheese (optional)
- fresh parsley for garnish
Instructions
- Prepare the Goulash: In a large skillet or Dutch oven, heat olive oil. Add onion and cook until softened. Stir in garlic. Add ground beef, salt, pepper, and Italian seasoning. Cook until beef is browned. Stir in tomato paste, tomato sauce, diced tomatoes, and broth. Bring to a simmer.
- Cook the Pasta: Add macaroni to the skillet and stir well. Cover and simmer for 12–15 minutes until pasta is tender and sauce is thickened.
- Finish and Serve: If desired, stir in shredded cheese until melted. Garnish with parsley before serving.
Notes
- For a heartier version, try adding diced bell peppers or mushrooms.
- Leftovers reheat well and can be frozen for up to 3 months.
