  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground cloves
  • 4 cups beef broth

To Serve

  • 12 small corn tortillas
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Toast Chiles and Simmer: In a pot over medium heat, lightly toast the dried guajillo and ancho chiles until fragrant, then add garlic, quartered onion, and beef broth. Bring the mixture to a simmer and cook for 20 minutes to develop deep flavors.
  2. Blend Sauce: Carefully transfer the cooked ingredients to a blender and blend until smooth to create a rich chile sauce. Then stir in apple cider vinegar, ground cumin, dried oregano, and ground cloves to season the sauce perfectly.
  3. Slow Cook Beef: Pour the blended chile sauce over the chunks of beef chuck roast in a slow cooker. Cook on low heat for 6 hours, or until the beef is very tender and shreds easily with a fork.
  4. Prepare Tortillas: Once the beef is ready, heat the corn tortillas on a griddle or skillet until warm and pliable to prevent cracking while assembling tacos.
