Ingredients

Scale

Main Ingredients:

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • 46 warm pita breads
  • 1 cup tzatziki sauce
  • 1 cup chopped romaine or shredded lettuce
  • 1/2 cup sliced red onion
  • 1 cup diced tomatoes
  • 1/2 cup crumbled feta cheese
  • lemon wedges

Instructions

  1. Marinate the Chicken: Combine olive oil, Greek yogurt, lemon juice, garlic, vinegar, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken, coat well, and marinate for 1-8 hours.
  2. Cook the Chicken: Grill or cook marinated chicken for 5–7 minutes per side until fully cooked. Let rest, then slice thinly.
  3. Assemble Gyros: Warm pita breads and layer with lettuce, tomato, red onion, sliced chicken, tzatziki, and feta. Serve with lemon.

Notes

  • For best flavor, use chicken thighs and grill over open flame if possible.
  • Great for meal prep—store cooked chicken and toppings separately.
