Ingredients
Scale
Potatoes
- 3 lbs russet or Yukon gold potatoes, peeled and cut into chunks
Dairy & Fats
- 4 tablespoons unsalted butter
- 3/4 cup whole milk, warmed
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese, divided
- 1/4 cup grated Parmesan cheese
Seasonings
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Garnish (Optional)
- Chopped chives or green onions
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Potatoes: Place the peeled and chopped potato chunks into a large pot and cover completely with cold water. Bring to a boil over high heat, then reduce the heat to a simmer and cook for 15 to 20 minutes until the potatoes are fork-tender.
- Drain and Mash: Drain the cooked potatoes and return them to the pot. Add butter, warmed whole milk, sour cream, salt, black pepper, and garlic powder. Mash everything together until smooth and creamy, ensuring even distribution of flavors.
- Add Cheese: Stir in 1 cup of the shredded cheddar cheese into the mashed potatoes to incorporate a cheesy richness throughout.
- Assemble in Baking Dish: Transfer the cheesy mashed potatoes to the prepared baking dish, smoothing the surface evenly with a spatula or spoon.
- Top with Remaining Cheese: Sprinkle the remaining 1/2 cup of cheddar cheese and the grated Parmesan cheese evenly over the top of the mashed potatoes.
- Bake: Place the baking dish uncovered in the preheated oven and bake for 20 to 25 minutes until the top cheese layer is melted, bubbly, and slightly golden.
- Garnish and Serve: Remove from oven and optionally garnish with chopped chives or green onions before serving for a fresh, vibrant touch.
Notes
- For extra richness, add a few tablespoons of cream cheese to the mashed potatoes.
