  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 1 cup chopped baby spinach

  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt

  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for roasting the vegetables and feta cheese.
  2. Prepare the Base: In an oven-safe dish, combine the cherry tomatoes, diced red bell pepper, diced red onion, and minced garlic. Place the block of feta cheese in the center of the dish and drizzle everything with olive oil.
  3. Season the Dish: Mix together the dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes. Sprinkle this seasoning mixture evenly over the vegetables and feta in the dish to infuse flavor.
  4. Bake Vegetables & Feta: Place the dish in the preheated oven and bake for 25 minutes, or until the tomatoes and vegetables are tender and the feta cheese becomes soft and slightly golden.
  5. Add Spinach: Remove the dish from the oven and stir in the chopped baby spinach to wilt slightly from the residual heat.
  6. Add the Eggs: Create four small wells in the baked vegetable and feta mixture, then carefully crack one egg into each well.
  7. Final Bake: Return the dish to the oven and bake for an additional 10 minutes. Bake until the egg whites are set but the yolks remain runny, adjusting time slightly if necessary for desired doneness.
  8. Garnish & Serve: Once out of the oven, sprinkle chopped fresh basil or chives over the top. Serve warm, ideally with crusty bread on the side to scoop up the delicious mixture.
