Ingredients
Scale
Potatoes and Seasoning
- 4 medium potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper, to taste
Topping
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for the potatoes to bake evenly and become crispy.
- Prepare the potatoes: In a large bowl, toss the cubed potatoes with olive oil, dried oregano, garlic powder, salt, and pepper. Make sure all pieces are evenly coated with the seasoning.
- Bake the potatoes: Spread the seasoned potatoes evenly on a baking sheet to allow for proper roasting. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
- Add the feta cheese: Remove the baking sheet from the oven and sprinkle the crumbled feta cheese evenly over the hot potatoes. Return to the oven and bake for an additional 5-7 minutes until the feta softens and slightly melts.
- Garnish and serve: Once baked, remove from the oven and garnish with freshly chopped parsley. Serve the baked feta potatoes immediately for the best flavor and texture.
Notes
- You can leave the potato skins on for added texture and nutrients if preferred.
- For a spicier kick, add a pinch of red pepper flakes with the seasoning.
- Feta cheese can be substituted with halloumi or goat cheese for variation.
- Use fresh garlic instead of garlic powder for a stronger garlic flavor.
- This dish pairs well with grilled meats or a fresh green salad for a complete meal.
