Description

Delicious and easy BBQ Chicken Nachos loaded with shredded chicken smothered in tangy BBQ sauce, melted cheddar cheese, black beans, and fresh toppings. Perfect for game day, parties, or a satisfying appetizer.

  • 4 cups tortilla chips

Chicken Mixture

  • 2 cups cooked shredded chicken
  • ½ cup BBQ sauce (plus more for drizzling)

  • 1½ cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • ½ cup canned black beans, drained and rinsed
  • ¼ cup red onion, thinly sliced
  • ¼ cup pickled jalapeños (optional)
  • ¼ cup chopped fresh cilantro
  • ¼ cup sour cream or ranch dressing, for topping (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the nachos.
  2. Coat Chicken: In a mixing bowl, toss the cooked shredded chicken with ½ cup of BBQ sauce until the chicken is evenly coated with the sauce.
  3. Layer Ingredients: On a large baking sheet lined with parchment paper, spread half of the tortilla chips evenly. Top this layer with half of the BBQ chicken, followed by half of the shredded cheese, black beans, and red onions.
  4. Repeat Layers: Add the remaining tortilla chips to form the second layer, then top with the rest of the BBQ chicken, cheese, black beans, and onions. Add pickled jalapeños if desired for extra heat.
  5. Bake: Place the baking sheet in the preheated oven and bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve: Remove the nachos from the oven. Drizzle additional BBQ sauce on top, sprinkle with chopped fresh cilantro, and add dollops of sour cream or ranch dressing if using. Serve immediately with lime wedges on the side.

  • Use rotisserie chicken to save time in preparation.
