Description

Bread and Butter

  • 4 slices sourdough or sandwich bread
  • 1 tablespoon butter, softened

Filling

  • 1/2 cup cooked ground beef or shredded beef, seasoned with taco or fajita seasoning
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup guacamole
  • 1 tablespoon pickled jalapeños (optional)
  • 1 tablespoon chopped cilantro (optional)
  • Salt and pepper to taste


Instructions

  1. Prepare the Bread: Butter one side of each slice of bread thoroughly to ensure a golden, crispy exterior when grilled.
  2. Build the Sandwiches: Place two bread slices, butter-side down, on a flat surface. Layer evenly with shredded cheese, followed by the seasoned beef. Add pickled jalapeños and chopped cilantro if using, then season lightly with salt and pepper.
  3. Add Guacamole Layer: Spread the guacamole evenly on the non-buttered side of the remaining two slices of bread. Carefully place these slices on top of the prepared bottom slices, making sure the buttered side faces outwards.
  4. Grill the Sandwiches: Heat a nonstick skillet or griddle over medium heat. Place the assembled sandwiches in the pan and cook for 3 to 4 minutes per side, pressing gently with a spatula to promote even browning and cheese melting.
  5. Rest and Serve: Once golden brown and the cheese has melted, remove the sandwiches from the heat. Let them rest for 1 minute to settle, then slice and serve warm for the best taste and texture.
