Ingredients for Chicken and Rice Casserole:
- 2 cups cooked chicken (shredded or diced)
- 1 cup uncooked long-grain white rice
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 3/4 cups low-sodium chicken broth
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for greasing the pan)
- Chopped parsley (for garnish)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil.
- Mix Ingredients: In a large bowl, combine rice, soups, broth, sour cream, spices, and half of the cheese. Add chicken and mix well.
- Layer in Baking Dish: Pour mixture into the prepared dish, cover with foil, and bake for 55–60 minutes.
- Add Cheese: Uncover, top with remaining cheese, and bake for an additional 5-10 minutes until cheese is melted.
- Serve: Rest for 5 minutes, garnish with parsley, and serve.

- You can use rotisserie chicken for convenience.
