- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons lime juice
- 1 tablespoon honey or sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cowboy Caviar: In a large mixing bowl, combine the black beans, black-eyed peas, corn, bell peppers, tomatoes, red onion, jalapeño, and cilantro.
- Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lime juice, honey, chili powder, cumin, salt, and pepper until emulsified.
