  • 3 tablespoons red wine vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon honey or sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cowboy Caviar: In a large mixing bowl, combine the black beans, black-eyed peas, corn, bell peppers, tomatoes, red onion, jalapeño, and cilantro.
  2. Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lime juice, honey, chili powder, cumin, salt, and pepper until emulsified.
