Ingredients
Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 1 tablespoon granulated sugar
Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup Greek yogurt or sour cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Cinnamon Swirl:
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon all-purpose flour
- 2 tablespoons melted butter
Glaze (optional):
- 1/2 cup powdered sugar
- 1–2 teaspoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
- In a blender, combine cream cheese, Greek yogurt, granulated sugar, eggs, and vanilla. Blend until completely smooth.
- In a separate bowl, mix the brown sugar, cinnamon, flour, and melted butter to form a thick swirl mixture.
- Bake for 30–35 minutes, or until the center is set and no longer jiggly.
- For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the chilled bars before serving.
In a small bowl, mix graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the pan to form an even crust.
Pour the cheesecake batter over the crust and spread evenly.
Drop small spoonfuls of the cinnamon mixture over the cheesecake batter, then use a knife or toothpick to gently swirl it into the surface.
Let cool completely at room temperature, then chill in the refrigerator for at least 2 hours.
Notes
- These bars are best served cold and can be made a day in advance.
- For a thicker swirl layer, double the cinnamon mixture.
- Use full-fat cream cheese and yogurt for the creamiest texture.
