Description

Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter

Cheesecake Filling:

  • 2 large eggs
  • 1 teaspoon vanilla extract

Cinnamon Swirl:

  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 2 tablespoons melted butter

Glaze (optional):

  • 1/2 cup powdered sugar
  • 12 teaspoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a small bowl, mix graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the pan to form an even crust.

  3. In a blender, combine cream cheese, Greek yogurt, granulated sugar, eggs, and vanilla. Blend until completely smooth.
  4. Pour the cheesecake batter over the crust and spread evenly.

  5. In a separate bowl, mix the brown sugar, cinnamon, flour, and melted butter to form a thick swirl mixture.
  6. Drop small spoonfuls of the cinnamon mixture over the cheesecake batter, then use a knife or toothpick to gently swirl it into the surface.

  7. Bake for 30–35 minutes, or until the center is set and no longer jiggly.
  8. Let cool completely at room temperature, then chill in the refrigerator for at least 2 hours.

  9. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the chilled bars before serving.
