Description

These BLT Chicken Salad Lettuce Wraps are a fresh and flavorful twist on a classic BLT sandwich. Tender chicken, crispy bacon, and juicy cherry tomatoes are mixed with a creamy dressing and served in crisp lettuce leaves for a low-carb, gluten-free meal that’s perfect for lunch or a light dinner.

Ingredients

Scale

Chicken Salad:

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/2 cup cooked and crumbled bacon
  • 1 cup cherry tomatoes, halved
  • 1/3 cup mayonnaise
  • 1 tablespoon Greek yogurt or sour cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh chives or green onions

Assembly:

  • 8 large butter lettuce leaves or romaine hearts

Instructions

  1. In a large bowl, combine the cooked chicken, crumbled bacon, and cherry tomatoes. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, garlic powder, salt, and pepper.
  2. Pour the dressing over the chicken mixture and stir until evenly coated. Gently fold in the chopped chives.
  3. Spoon the chicken salad into the center of each lettuce leaf. Serve immediately or chill for later.

Notes

  • Add diced avocado or shredded cheese for extra richness.
  • This salad also works great in wraps, sandwiches, or over a bed of greens.
