Biscuit Dough

Caramel Filling

  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Prepare the biscuit dough: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, granulated sugar, and salt. Cut in the chilled, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the cold water and mix gently just until the dough holds together.
  2. Shape and bake the biscuits: Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Cut into round or rectangular shapes as desired. Place these on a parchment-lined baking sheet and bake for 12 to 15 minutes or until the biscuits turn lightly golden. Remove from oven and allow to cool completely.
  3. Make the caramel filling: In a small saucepan over medium heat, combine the brown sugar and butter. Stir continuously until melted and smooth. Add the heavy cream, vanilla extract, and a pinch of salt. Let the mixture simmer for 2 to 3 minutes until it thickens slightly. Remove from heat and cool the caramel until it reaches a spreadable consistency.
  4. Assemble the sandwich biscuits: Spread a generous layer of the cooled caramel onto the flat side of one biscuit. Top it with another biscuit, pressing gently to form a sandwich. Repeat this step with the remaining biscuits and caramel filling.

Notes

  • For an extra indulgent treat, drizzle melted chocolate over the top of the caramel biscuits or dip half of each biscuit in chocolate and let it set.
