- 1/4 cup unsalted butter, melted
Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 tablespoon instant coffee granules dissolved in 1 tablespoon hot water
- 1 teaspoon vanilla extract
- 3 large eggs
Chocolate Ganache:
- 1/2 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
Caramel Drizzle:
- 1/2 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat Oven: Preheat oven to 325°F (163°C). Line and grease a 9-inch springform pan.
- Prepare Crust: Mix cookie crumbs and melted butter, press into pan, and bake for 10 minutes.
- Make Filling: Beat cream cheese and sugar, then add sour cream, coffee, vanilla, and eggs. Pour over crust.
- Bake: Bake in a water bath for 55–65 minutes until set. Cool and refrigerate.
- Prepare Ganache: Heat cream, pour over chocolate chips, stir until smooth. Pour over cheesecake.
- Chill: Refrigerate to set. Drizzle with caramel before serving.
