Cheesecake Filling:

  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tablespoon instant coffee granules dissolved in 1 tablespoon hot water
  • 1 teaspoon vanilla extract
  • 3 large eggs

Chocolate Ganache:

  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Caramel Drizzle:

  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat Oven: Preheat oven to 325°F (163°C). Line and grease a 9-inch springform pan.
  2. Prepare Crust: Mix cookie crumbs and melted butter, press into pan, and bake for 10 minutes.
  3. Make Filling: Beat cream cheese and sugar, then add sour cream, coffee, vanilla, and eggs. Pour over crust.
  4. Bake: Bake in a water bath for 55–65 minutes until set. Cool and refrigerate.
  5. Prepare Ganache: Heat cream, pour over chocolate chips, stir until smooth. Pour over cheesecake.
  6. Chill: Refrigerate to set. Drizzle with caramel before serving.
