Cheesy Rotel Ranch Queso:

  • 1 pound Velveeta cheese, cubed
  • 1 (10-ounce) can Rotel diced tomatoes with green chilies (undrained)
  • ½ cup ranch dressing
  • ½ cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • 1 tablespoon chopped fresh cilantro (optional)
  • tortilla chips (for serving)


Instructions

  1. In a medium saucepan over low heat, combine the cubed Velveeta, Rotel (with juices), ranch dressing, cheddar cheese, garlic powder, onion powder, and smoked paprika.
  2. Stir continuously until the cheese is fully melted and the mixture is smooth, about 8–10 minutes.

  3. Once melted, remove from heat and stir in chopped cilantro if using.
  4. Transfer to a serving bowl or keep warm in a slow cooker on the ‘warm’ setting.
