			Cheesy Rotel Ranch Queso:
- 1 pound Velveeta cheese, cubed
 - 1 (10-ounce) can Rotel diced tomatoes with green chilies (undrained)
 - ½ cup ranch dressing
 - ½ cup shredded cheddar cheese
 - ½ teaspoon garlic powder
 - ½ teaspoon onion powder
 - ¼ teaspoon smoked paprika
 - 1 tablespoon chopped fresh cilantro (optional)
 - tortilla chips (for serving)
 
Instructions
- In a medium saucepan over low heat, combine the cubed Velveeta, Rotel (with juices), ranch dressing, cheddar cheese, garlic powder, onion powder, and smoked paprika.
 - Once melted, remove from heat and stir in chopped cilantro if using.
 - Serve hot with tortilla chips.
 
Stir continuously until the cheese is fully melted and the mixture is smooth, about 8–10 minutes.
Transfer to a serving bowl or keep warm in a slow cooker on the ‘warm’ setting.
Notes
- For extra spice, use hot Rotel or add diced jalapeños.
 - You can also add browned ground beef or sausage for a heartier dip.
