Meatloaf Bites:
- 1 pound ground beef
- 1/3 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces mozzarella cheese, cut into small cubes

- 1/3 cup ketchup
- 1 tablespoon brown sugar
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin or baking sheet.
- Mix Meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently until combined.
- Form Meatballs: Scoop about 2 tablespoons of the mixture, flatten it, place a cube of mozzarella in the center, and wrap the meat around it to form a ball. Place in the muffin tin or on a baking sheet.
- Prepare Topping: Mix ketchup with brown sugar and spoon a little over each meatloaf bite.
- Bake: Bake for 18–22 minutes until cooked through and cheese is melted. Rest for 5 minutes before serving.
