  • 1/3 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces mozzarella cheese, cut into small cubes

Topping:

  • 1/3 cup ketchup
  • 1 tablespoon brown sugar


Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin or baking sheet.
  2. Mix Meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently until combined.
  3. Form Meatballs: Scoop about 2 tablespoons of the mixture, flatten it, place a cube of mozzarella in the center, and wrap the meat around it to form a ball. Place in the muffin tin or on a baking sheet.
  4. Prepare Topping: Mix ketchup with brown sugar and spoon a little over each meatloaf bite.
  5. Bake: Bake for 18–22 minutes until cooked through and cheese is melted. Rest for 5 minutes before serving.
