  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned rolled oats

Optional Add-Ins:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or chocolate chips

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Wet Ingredients: In a large mixing bowl, cream together the butter and brown sugar. Add the mashed banana, egg, and vanilla, mixing well.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture, stirring until just combined.
  4. Stir in Oats and Optional Add-Ins: Mix in the oats, and fold in nuts or raisins/chocolate chips if desired.
  5. Bake: Drop rounded tablespoons of dough onto the baking sheets. Bake for 10–12 minutes until lightly golden. Cool on the pan before transferring to a wire rack to cool completely.
