For the Chicken:
- 1 pound boneless skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls:
- 1 cup cooked rice (white, brown, or cauliflower)
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced or diced
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Optional Toppings: shredded cheese, sour cream or Greek yogurt, salsa, hot sauce
Instructions
- Prepare the Chicken: In a bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Add chicken and toss to coat.
- Cook the Chicken: Heat a grill pan or skillet over medium heat. Cook chicken for 5–6 minutes per side, or until fully cooked and nicely browned. Let rest for 5 minutes, then slice or dice.
- Assemble the Bowls: Divide the rice among 4 bowls. Top each with cooked chicken, black beans, corn, tomatoes, avocado, and red onion. Sprinkle with cilantro and serve with lime wedges and optional toppings of your choice.
Notes
- Great for meal prep—store ingredients separately and assemble fresh.
- You can also use quinoa or shredded lettuce as the base instead of rice.
