For the Chicken:

  • 1 pound boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowls:

  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced or diced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Optional Toppings: shredded cheese, sour cream or Greek yogurt, salsa, hot sauce


Instructions

  1. Prepare the Chicken: In a bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Add chicken and toss to coat.
  2. Cook the Chicken: Heat a grill pan or skillet over medium heat. Cook chicken for 5–6 minutes per side, or until fully cooked and nicely browned. Let rest for 5 minutes, then slice or dice.
  3. Assemble the Bowls: Divide the rice among 4 bowls. Top each with cooked chicken, black beans, corn, tomatoes, avocado, and red onion. Sprinkle with cilantro and serve with lime wedges and optional toppings of your choice.

Notes
