Description

This Chicken Cobbler Dinner Casserole is a comforting and easy-to-make dish that layers tender shredded chicken and mixed vegetables with a fluffy biscuit topping, all baked to golden perfection. A delicious twist on a classic casserole!

Ingredients

Scale

For the Filling:

  • 2 cups cooked shredded chicken
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Biscuit Topping:

  • 4 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

For the Sauce:

  • 1 can (10.5 ounces) cream of chicken soup
  • 1 1/2 cups chicken broth
  • 1 teaspoon dried thyme (optional)
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Prepare the Filling: Spread the shredded chicken in the baking dish. Add the mixed vegetables and season with garlic powder, onion powder, salt, and pepper.
  3. Make the Biscuit Topping: Melt the butter and drizzle over the filling. In a bowl, mix flour, baking powder, salt, and milk. Pour this batter over the filling without stirring.
  4. Prepare the Sauce: In another bowl, combine cream of chicken soup, chicken broth, thyme, and parsley. Pour over the batter without stirring.
  5. Bake: Bake for 45–50 minutes until golden brown and bubbly. Let it rest for 5–10 minutes before serving.

Notes

  • Use rotisserie chicken for quicker preparation.
  • Substitute cream of mushroom or cream of celery soup if desired.
  • Do not stir the layers to allow the cobbler to form properly.
