- 4 tablespoons unsalted butter
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
For the Sauce:
- 1 can (10.5 ounces) cream of chicken soup
- 1 1/2 cups chicken broth
- 1 teaspoon dried thyme (optional)
- 1/2 teaspoon dried parsley
Instructions
- Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- Prepare the Filling: Spread the shredded chicken in the baking dish. Add the mixed vegetables and season with garlic powder, onion powder, salt, and pepper.
- Make the Biscuit Topping: Melt the butter and drizzle over the filling. In a bowl, mix flour, baking powder, salt, and milk. Pour this batter over the filling without stirring.
- Prepare the Sauce: In another bowl, combine cream of chicken soup, chicken broth, thyme, and parsley. Pour over the batter without stirring.
- Bake: Bake for 45–50 minutes until golden brown and bubbly. Let it rest for 5–10 minutes before serving.
Notes
- Use rotisserie chicken for quicker preparation.
- Substitute cream of mushroom or cream of celery soup if desired.
