Description

This Chicken Cordon Bleu Meatloaf combines the flavors of the classic dish in a hearty and comforting meatloaf. Ground chicken is seasoned and layered with ham, Swiss cheese, and a touch of Dijon mustard for a delicious twist on a traditional meatloaf recipe.

For the Meatloaf:

  • 2 pounds ground chicken
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

For Filling and Topping:

  • 6 slices deli ham
  • 6 slices Swiss cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a loaf pan with olive oil.
  2. Mix the meatloaf: In a large bowl, combine ground chicken, breadcrumbs, egg, milk, garlic powder, onion powder, dried parsley, salt, black pepper, and Parmesan cheese. Press half of the mixture into the loaf pan.
  3. Add the filling: Layer ham and Swiss cheese over the chicken mixture. Spread Dijon mustard and mayonnaise on top. Add the remaining chicken mixture and press down.
  4. Bake: Bake for 45-50 minutes until cooked through. Top with mozzarella and bake for another 5 minutes until melted.
  5. Rest and serve: Let the meatloaf rest for 10 minutes before garnishing with parsley and slicing.

Notes

  • You can substitute provolone for Swiss cheese or turkey for ham if preferred.
  • For a crispier top, broil the meatloaf for 2-3 minutes after adding the mozzarella.
