Description

Chicken Poppy Seed Bubble Up is a comforting and easy-to-make casserole that combines tender cooked chicken with a creamy sauce, cheddar cheese, and crunchy poppy seeds all baked together with fluffy biscuit pieces. This dish is perfect for a quick family dinner or potluck, delivering rich flavors and a satisfying texture in under 40 minutes.

Ingredients

Scale

Chicken Mixture

  • 2 cups cooked chopped chicken
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • 1 (8-oz) container sour cream
  • 1 cup shredded cheddar cheese
  • ¼ tsp pepper
  • 1½ Tbsp poppy seeds

Biscuit Topping

  • 1 (16-oz) can refrigerated Grands! biscuits

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking and set it aside.
  2. Mix Ingredients: In a large bowl, combine the cooked chopped chicken, cream of chicken soup, sour cream, shredded cheddar cheese, pepper, and poppy seeds. Stir well until all ingredients are evenly incorporated.
  3. Prepare Biscuits: Cut each refrigerated biscuit into 6 small pieces. Add these biscuit pieces to the chicken mixture and toss gently to coat them thoroughly with the creamy mixture.
  4. Assemble and Bake: Pour the combined chicken and biscuit mixture into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 25-30 minutes, until the casserole is bubbly and the biscuit pieces are golden brown on top.

Notes

  • You can use rotisserie chicken or leftover cooked chicken for convenience.
  • For added flavor, sprinkle extra shredded cheese on top before baking.
  • If you prefer a spicier dish, add a pinch of cayenne pepper or diced jalapeños to the mixture.
  • Let the casserole rest for 5 minutes after baking to allow it to set before serving.
