- 1 can (15 oz) black beans, drained and rinsed

Instructions
- Prepare the aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
- Cook the ground beef: Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks to ensure even cooking and prevent clumps.
- Add vegetables and tomato paste: Stir in the chopped red bell pepper and tomato paste, cooking for about 2 minutes to deepen the flavors.
- Combine remaining ingredients: Add diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper if using. Stir well to combine all ingredients.
- Simmer the chili: Bring the mixture to a simmer, then cover the pot and reduce heat to low. Let it simmer gently for 30–40 minutes, stirring occasionally, until the chili is thickened and the flavors meld together.
- Adjust seasoning and serve: Taste the chili and adjust seasonings if necessary. Serve hot garnished with chopped fresh cilantro or green onions, alongside your favorite toppings such as shredded cheese or sour cream.
