Description

A delicious and easy Chili Relleno Casserole that combines spicy green chiles with a cheesy egg batter for a comforting baked dish perfect for brunch or dinner.

Ingredients

Scale

Main Ingredients

  • 2 (4-oz) cans whole green chiles, diced
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 3 large eggs
  • ¾ cup Bisquick
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp ground cumin
  • 1½ cups whole milk
  • Salt, to taste
  • Black pepper, to taste
  • Cooking spray, for greasing

Instructions

  1. Preheat oven: Preheat your oven to 400ºF (204ºC). Grease a 9-inch deep dish pie plate or quiche pan lightly with cooking spray to prevent sticking.
  2. Prepare chile and cheese base: Spread the diced green chiles evenly on the bottom of the prepared pie plate. Then sprinkle 1½ cups of the shredded cheese (a mix of Monterey Jack and cheddar) evenly over the chiles.
  3. Mix egg batter: In a medium bowl, whisk together the eggs, Bisquick, whole milk, garlic powder, onion powder, salt, black pepper, and cumin until the mixture is smooth and well combined.
  4. Assemble casserole: Pour the egg batter evenly over the chile and cheese layer in the pie plate, making sure it settles all around.
  5. Bake the casserole: Place the casserole in the oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean and the egg mixture is set.
  6. Broil cheese topping: Remove the casserole from the oven, sprinkle the remaining ½ cup of shredded cheese on top, and place it under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Watch carefully to prevent burning.
  7. Rest and serve: Let the casserole stand for 5 minutes to set before slicing and serving warm.

Notes

  • Dicing the green chiles ensures even distribution throughout the casserole.
  • You can use a combination of Monterey Jack and cheddar cheese or substitute with your favorite cheeses.
  • Adjust seasoning with salt and pepper to taste.
  • Broil the cheese topping just until melted to avoid overcooking.
  • This casserole can be served with salsa, sour cream, or fresh cilantro for added flavor.
