For the Filling

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 chipotle pepper in adobo sauce, minced
  • 1 teaspoon adobo sauce
  • 1 tablespoon lime juice

For Serving

  • 8 small corn or flour tortillas
  • Optional toppings: shredded red cabbage, avocado slices, crumbled feta or cotija cheese, chopped cilantro, lime wedges, sour cream or chipotle mayo


Instructions

  1. Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potato with olive oil, smoked paprika, ground cumin, salt, and pepper until evenly coated. Spread the sweet potatoes out on a baking sheet in a single layer and roast for 20–25 minutes, flipping them halfway through, until they are tender on the inside and slightly crispy on the edges.
  2. Prepare Quinoa Mixture: In a bowl, combine the cooked quinoa with the minced chipotle pepper, adobo sauce, and lime juice. Stir the mixture well to fully incorporate the smoky and tangy flavors.
  3. Combine with Roasted Sweet Potatoes: Add the roasted sweet potatoes to the quinoa mixture and gently stir them together. Taste and adjust seasoning by adding more salt, pepper, or lime juice if needed.
  4. Warm Tortillas and Assemble Tacos: Warm the tortillas either in a skillet over medium heat or in the microwave until soft and pliable. Spoon the sweet potato and quinoa mixture evenly into each tortilla.
  5. Add Toppings and Serve: Top each taco with your choice of optional toppings such as shredded red cabbage, avocado slices, crumbled cheese, chopped cilantro, and a squeeze of lime. Serve immediately with extra lime wedges on the side for added brightness.
