For the Filling
- 1 large sweet potato, peeled and diced
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 chipotle pepper in adobo sauce, minced
- 1 teaspoon adobo sauce
- 1 tablespoon lime juice
For Serving
- 8 small corn or flour tortillas
- Optional toppings: shredded red cabbage, avocado slices, crumbled feta or cotija cheese, chopped cilantro, lime wedges, sour cream or chipotle mayo
Instructions
- Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potato with olive oil, smoked paprika, ground cumin, salt, and pepper until evenly coated. Spread the sweet potatoes out on a baking sheet in a single layer and roast for 20–25 minutes, flipping them halfway through, until they are tender on the inside and slightly crispy on the edges.
- Prepare Quinoa Mixture: In a bowl, combine the cooked quinoa with the minced chipotle pepper, adobo sauce, and lime juice. Stir the mixture well to fully incorporate the smoky and tangy flavors.
- Combine with Roasted Sweet Potatoes: Add the roasted sweet potatoes to the quinoa mixture and gently stir them together. Taste and adjust seasoning by adding more salt, pepper, or lime juice if needed.
- Warm Tortillas and Assemble Tacos: Warm the tortillas either in a skillet over medium heat or in the microwave until soft and pliable. Spoon the sweet potato and quinoa mixture evenly into each tortilla.
- Add Toppings and Serve: Top each taco with your choice of optional toppings such as shredded red cabbage, avocado slices, crumbled cheese, chopped cilantro, and a squeeze of lime. Serve immediately with extra lime wedges on the side for added brightness.
