Cookie Dough:

1 (3.4-ounce) box instant vanilla pudding mix (dry)
1 large egg

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
Additional Mix-ins:
1/2 cup semi-sweet chocolate chips
1/2 cup chopped pecans
1/2 cup soft caramel bits or chopped caramels
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the dry pudding mix until fully combined.
- Add egg and vanilla: Add the egg and vanilla extract and mix well.
- Combine dry ingredients: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in mix-ins: Fold in the chocolate chips, pecans, and caramel bits.
- Bake: Scoop the dough into heaping tablespoon-sized balls and place them on the baking sheet. Bake for 9–11 minutes, or until lightly golden.
- Cool: Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
