Dry Ingredients:

- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1/2 cup hot water or brewed coffee
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare the mini cake pan.
- Prepare dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Mix wet ingredients: In a large bowl, cream butter and sugars, then add eggs one at a time, vanilla extract, and milk.
- Combine ingredients: Alternate adding dry ingredients and milk to the butter mixture. Slowly stir in hot water or coffee. Fold in chocolate chips if using.
- Bake: Divide batter into mini cake cavities and bake for 15–18 minutes. Cool before decorating.
Notes
- For extra richness, use coffee instead of water.
- These mini cakes freeze well—wrap tightly and store for up to 2 months.
