Chicken Thighs:

  • 2 pounds boneless, skinless chicken thighs

Marinade:

  • 1/4 cup olive oil
  • Zest and juice of 2 limes
  • 1/2 cup fresh cilantro, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the Marinade: In a large bowl or zip-top bag, combine olive oil, lime zest and juice, cilantro, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, toss to coat evenly, and refrigerate for at least 30 minutes, preferably 2–4 hours.
  3. Grill or Sear: Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and grill or sear for 5–6 minutes per side until the internal temperature reaches 165°F (74°C) and the chicken is golden and slightly charred.
  4. Rest and Serve: Let the chicken rest for 5 minutes before serving. Garnish with extra cilantro and lime wedges if desired.

  • This chicken is versatile and can be served in various ways such as over rice, in tacos, or with a fresh salad.
  • If preferred, the thighs can also be baked at 425°F (220°C) for 25–30 minutes.
