Chicken Thighs:
- 2 pounds boneless, skinless chicken thighs
Marinade:
- 1/4 cup olive oil
- Zest and juice of 2 limes
- 1/2 cup fresh cilantro, finely chopped
- 4 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the Marinade: In a large bowl or zip-top bag, combine olive oil, lime zest and juice, cilantro, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
- Marinate the Chicken: Add the chicken thighs to the marinade, toss to coat evenly, and refrigerate for at least 30 minutes, preferably 2–4 hours.
- Grill or Sear: Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and grill or sear for 5–6 minutes per side until the internal temperature reaches 165°F (74°C) and the chicken is golden and slightly charred.
- Rest and Serve: Let the chicken rest for 5 minutes before serving. Garnish with extra cilantro and lime wedges if desired.
Notes
- This chicken is versatile and can be served in various ways such as over rice, in tacos, or with a fresh salad.
- If preferred, the thighs can also be baked at 425°F (220°C) for 25–30 minutes.
