Egg Yolk Mixture:
- 6 large egg yolks
- 3/4 cup granulated sugar
Whipped Cream:
- 1 cup heavy cream
Mascarpone Filling:
- 1 pound (16 oz) mascarpone cheese (softened)
- 1 teaspoon vanilla extract
Other:
- 2 cups brewed espresso or strong coffee (cooled)
- 3 tablespoons coffee liqueur (optional)
- 1 package (7 oz) ladyfinger cookies (Savoiardi)
- unsweetened cocoa powder for dusting
- dark chocolate shavings for garnish (optional)
Instructions
- Egg Yolk Mixture: In a heatproof bowl over simmering water, whisk egg yolks and sugar until pale and thickened. Remove from heat and cool slightly.
- Whipped Cream: Beat heavy cream until stiff peaks form.
- Mascarpone Filling: Combine mascarpone cheese with vanilla extract, then fold in egg yolk mixture. Gently fold in whipped cream.
- Assembly: Dip ladyfingers in coffee mixture and layer in dish. Spread mascarpone filling over ladyfingers. Repeat layers. Chill for at least 6 hours.
- Serving: Dust top with cocoa powder and chocolate shavings before serving.
Notes
- Use freshly brewed espresso for best flavor.
- Omit coffee liqueur for a non-alcoholic version.
- Tiramisu can be made ahead and improves with time.
