Ingredients
Scale
Soup Base
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1 (28-ounce) can of whole peeled tomatoes
- 2 cups vegetable broth
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 teaspoon sugar (optional)
- Salt and pepper to taste
Finishing Touch
- 1/3 cup unsweetened almond milk (or other light milk)
- Fresh basil leaves for garnish (optional)
Instructions
- Heat Olive Oil and Sauté Onions: In a large pot over medium heat, warm the olive oil. Add the diced onion and sauté for 4-5 minutes until the onions are soft and translucent.
- Add Garlic and Spices: Stir in the minced garlic and red pepper flakes (if using). Cook for about 1 minute until fragrant but not burnt.
- Add Tomatoes and Broth: Pour in the canned whole peeled tomatoes and lightly break them up in the pot. Add the vegetable broth, dried basil, dried oregano, sugar (if using), and season with salt and pepper. Stir everything to combine.
- Simmer the Soup: Let the soup simmer uncovered for 20 minutes, stirring occasionally to allow flavors to meld and the liquid to reduce slightly.
- Blend Until Smooth: Remove the pot from heat and let it cool for a few minutes. Use an immersion blender or transfer carefully to a countertop blender to puree the soup until smooth.
- Finish with Almond Milk and Serve: Return the blended soup to the pot and stir in the unsweetened almond milk. Warm gently over low heat, taste, and adjust seasoning if needed. Serve hot garnished with fresh basil leaves if desired.
Notes
- You can substitute almond milk with any other light milk or cream alternatives.
- Adjust red pepper flakes based on your preference for spice.
- Use fresh tomatoes in season, but canned tomatoes keep the recipe simple and flavorful year-round.
- The sugar is optional and helps balance the acidity of the tomatoes.
- Blending can be done to your preferred texture – completely smooth or slightly chunky.
