Description

A hearty and comforting Cowboy Casserole that combines ground beef, creamy sauce, corn, and crispy tater tots, all baked to perfection. This easy-to-make dish is a family favorite for busy weeknights.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1 can (15 oz) whole kernel corn, drained
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Tater Tot Layer:

  • 1 bag (32 oz) frozen tater tots


Instructions

  1. Preheat oven: to 375°F.
  2. Cook beef mixture: In a skillet, cook ground beef, onion, and garlic. Add soup, sour cream, corn, 1/2 cup cheddar, paprika, pepper, and salt. Spread in baking dish.
  3. Add tater tots: Arrange tater tots on top of beef mixture.
  4. Bake: Uncovered for 25 minutes. Sprinkle remaining cheese over tater tots and bake for 5–10 minutes more.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or cream of celery.
  • For a spicy kick, add diced green chilies or a pinch of cayenne pepper to the beef mixture.
