- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 1 red bell pepper, chopped
- 1/2 small red onion, diced
- 2 tablespoons chopped fresh cilantro
- juice of 2 limes
- 1/2 teaspoon ground cumin
- salt and black pepper to taste
For the Avocados:

Instructions
- Cowboy Caviar Preparation: In a large mixing bowl, combine quinoa, black beans, black-eyed peas, corn, red bell pepper, red onion, cilantro, lime juice, cumin, salt, and pepper. Stir well until evenly mixed.
- Avocado Assembly: Slice the avocados in half and remove the pits. Gently scoop out about 1 tablespoon of avocado flesh from each half to create a larger cavity (optional). Fill each avocado half generously with the cowboy caviar mixture.
- Serve immediately or chill for 15–20 minutes before serving.
Notes
- To prepare ahead, make the cowboy caviar mixture up to 1 day in advance and store covered in the refrigerator.
- Assemble just before serving to prevent browning.
- Add diced tomatoes, jalapeño, or cotija cheese for extra flavor.
