Description

These Cowboy Caviar Stuffed Avocados are a delicious and healthy appetizer or snack that is easy to make and full of flavor. Creamy avocados are filled with a hearty mixture of quinoa, beans, corn, and fresh veggies, all tossed in a zesty lime dressing. Perfect for a light meal or party dish!

For the Cowboy Caviar:

  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • 1 red bell pepper, chopped
  • 1/2 small red onion, diced
  • 2 tablespoons chopped fresh cilantro
  • juice of 2 limes
  • 1/2 teaspoon ground cumin
  • salt and black pepper to taste

For the Avocados:

  • 3 ripe avocados

Instructions

  1. Cowboy Caviar Preparation: In a large mixing bowl, combine quinoa, black beans, black-eyed peas, corn, red bell pepper, red onion, cilantro, lime juice, cumin, salt, and pepper. Stir well until evenly mixed.
  2. Avocado Assembly: Slice the avocados in half and remove the pits. Gently scoop out about 1 tablespoon of avocado flesh from each half to create a larger cavity (optional). Fill each avocado half generously with the cowboy caviar mixture.
  3. Serve immediately or chill for 15–20 minutes before serving.

Notes

  • To prepare ahead, make the cowboy caviar mixture up to 1 day in advance and store covered in the refrigerator.
  • Assemble just before serving to prevent browning.
  • Add diced tomatoes, jalapeño, or cotija cheese for extra flavor.
