Main Cake:

- 2½ cups all-purpose flour
- 1½ teaspoons baking soda

- 2 cups granulated sugar
- 3 large eggs
- 1½ teaspoons vanilla extract
- 1½ cups buttermilk
Frosting:
- ½ cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 teaspoon vanilla extract
- 3½ to 4 cups powdered sugar
Instructions
- Preheat oven and prepare pan: Preheat oven to 275°F (135°C) and grease/flour a 9×13-inch baking pan.
- Mix bananas and dry ingredients: Mash bananas with lemon juice; combine flour, baking soda, and salt in a bowl.
- Cream butter and sugar: Beat butter and sugar until light; add eggs and vanilla.
- Combine wet and dry ingredients: Alternate adding flour mixture/buttermilk to batter; stir in banana mix.
- Bake and cool: Pour batter into pan, bake 60–70 mins; cool in freezer for 45 mins.
- Make frosting: Beat butter/cream cheese, add vanilla and powdered sugar.
- Frost cake: Once cool, frost cake and serve.
