  • 3 pounds Yukon Gold or Russet potatoes, peeled and cubed

Cream Cheese Mixture:

  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup whole milk, warmed
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped (optional for garnish)

Instructions

  1. Cook Potatoes: Place the potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Simmer until fork-tender.
  2. Drain and Mash: Drain the potatoes, return to the pot, and mash until mostly smooth.
  3. Add Ingredients: Add cream cheese, sour cream, butter, warm milk, salt, and pepper. Mix until creamy.
  4. Adjust and Serve: Taste, adjust seasoning, transfer to a dish, garnish with chives, and serve warm.
