			Potatoes:
- 3 pounds Yukon Gold or Russet potatoes, peeled and cubed
 
Cream Cheese Mixture:
- 4 ounces cream cheese, softened
 - 1/2 cup sour cream
 - 1/2 cup whole milk, warmed
 - 4 tablespoons unsalted butter
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 2 tablespoons fresh chives, chopped (optional for garnish)
 
Instructions
- Cook Potatoes: Place the potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Simmer until fork-tender.
 - Drain and Mash: Drain the potatoes, return to the pot, and mash until mostly smooth.
 - Add Ingredients: Add cream cheese, sour cream, butter, warm milk, salt, and pepper. Mix until creamy.
 - Adjust and Serve: Taste, adjust seasoning, transfer to a dish, garnish with chives, and serve warm.
 
Notes
- For extra flavor, consider using roasted garlic in place of some butter.
 - Mashed potatoes can be made ahead and reheated with extra milk.
