			Chicken:
- 4 boneless, skinless chicken breasts
 
Sauce:
- 2 tablespoons olive oil
 - 2 tablespoons unsalted butter
 - 8 oz cremini or button mushrooms (sliced)
 - 3 garlic cloves (minced)
 - 1/2 teaspoon dried thyme
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 1/2 cup chicken broth
 - 1/2 cup heavy cream
 - 6 oz brie cheese (rind removed and cut into chunks)
 - chopped fresh parsley for garnish (optional)
 
Instructions
- Season chicken breasts: Season chicken breasts with salt and pepper.
 - Sear chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and sear for 4–5 minutes per side. Transfer to a plate.
 - Cook mushrooms: In the same skillet, add butter, mushrooms, garlic, and thyme. Cook until mushrooms release moisture.
 - Add liquids: Pour in chicken broth, then add heavy cream. Simmer and stir in brie cheese.
 - Combine and serve: Return chicken to the skillet, simmer until cooked through. Serve with sauce and mushrooms over chicken. Garnish with parsley.
