- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Sauce:
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup Dijon mustard
- 2 tablespoons whole grain mustard
- 3 tablespoons honey
- 1/2 cup heavy cream
For Garnish:
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Season the Chicken: Season chicken breasts with salt and pepper on both sides.
- Sear the Chicken: In a large skillet over medium-high heat, heat olive oil and 1 tablespoon of the butter. Add chicken and sear for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- Make the Sauce: In the same skillet, reduce heat to medium and add the remaining tablespoon of butter. Add garlic and sauté for 30 seconds until fragrant. Pour in the chicken broth and stir, scraping up any browned bits. Whisk in Dijon mustard, whole grain mustard, and honey until smooth. Reduce heat to low, then stir in the heavy cream. Simmer for 2–3 minutes until the sauce thickens slightly.
- Finish the Dish: Return the chicken to the skillet, coating it with the sauce. Simmer for another 2–3 minutes until heated through. Garnish with chopped parsley if desired and serve warm.
