For the Beef Layer:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/3 cup water
For the Casserole Layers:
- 1 can (10 oz) diced tomatoes with green chilies (drained)
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese (divided)
- 1/2 cup shredded mozzarella cheese
- 1 medium onion (sliced)
- 1 green bell pepper (sliced)
For the Biscuit Crust:
- 1 cup biscuit mix (such as Bisquick)
- 1/2 cup water
Instructions
- Preheat the Oven: Heat the oven to 350°F.
- Cook the Beef: Brown the ground beef in a skillet, drain excess fat, then add taco seasoning and water. Simmer until thickened.
- Prepare the Biscuit Crust: Mix biscuit mix and water to form a dough. Press into a greased baking dish.
- Layer the Casserole: Spread the beef over the crust, top with tomatoes, and then a mixture of sour cream, mayonnaise, and cheeses.
- Add Veggies: Sauté onion and green pepper, then layer over the cheese mixture.
- Bake: Sprinkle remaining cheddar on top and bake for 30–35 minutes until golden.
- Serve: Let rest before serving.
