Ingredients
Scale
Pasta
- 8 oz pasta (spaghetti, fettuccine, or your favorite pasta)
Sauce
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (cremini or button mushrooms work well)
- 1 tbsp white miso paste
- 1/2 cup heavy cream or coconut cream for a dairy-free option
- 1/4 cup vegetable or chicken broth
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp sesame oil
- Salt and pepper, to taste
Garnish (Optional)
- Chopped fresh parsley or chives
- Parmesan cheese
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta cooking water for later use.
- Sauté Aromatics: While the pasta cooks, heat olive oil in a large pan over medium heat. Add the finely chopped onion and minced garlic, cooking for 2 to 3 minutes until they become fragrant and softened.
- Cook Mushrooms: Add the sliced mushrooms to the pan. Cook for 5 to 6 minutes, stirring occasionally, until the mushrooms soften and release their moisture.
- Add Miso Paste: Stir in the white miso paste, ensuring it dissolves completely and evenly coats the vegetables in the pan.
- Make Creamy Sauce: Pour in the heavy cream or coconut cream, vegetable broth, soy sauce, rice vinegar, and sesame oil. Stir to combine all ingredients, then bring the mixture to a gentle simmer. Cook for 2 to 3 minutes until the sauce thickens slightly.
- Season Sauce: Taste and season the sauce with salt and pepper as needed. If the sauce becomes too thick, add a little of the reserved pasta cooking water to achieve your desired consistency.
- Toss Pasta with Sauce: Add the cooked pasta directly into the pan with the creamy miso mushroom sauce. Toss gently to coat all the pasta evenly with the sauce.
- Serve and Garnish: Divide the pasta into serving bowls. Garnish with chopped fresh parsley or chives, and sprinkle with Parmesan cheese if desired. Serve immediately and enjoy your creamy miso mushroom pasta!
Notes
- You can substitute heavy cream with coconut cream to make this dish dairy-free.
- Adjust the soy sauce and miso paste quantity based on your preferred saltiness level.
- Reserve some pasta water to loosen the sauce if it thickens too much.
- Use cremini mushrooms for a deeper flavor, or button mushrooms for a milder taste.
- Parmesan cheese is optional but adds a rich, savory topping.
