  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken or vegetable broth
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups fresh spinach
  • 3/4 cup heavy cream
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. Heat olive oil and sauté aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened. Stir in garlic, thyme, basil, and red pepper flakes.
  2. Add broth and tomatoes: Pour in the broth and diced tomatoes with juice. Bring to a simmer.
  3. Cook tortellini: Add the tortellini and cook until tender.
  4. Finish soup: Stir in spinach until wilted. Reduce heat, add cream, and simmer. Season with salt and pepper.
