Apple Filling

- 1/4 cup sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp lemon juice
- 1 tbsp cornstarch

- 12-15 egg roll wrappers

Instructions
- Cook the apple filling: In a saucepan, combine diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for about 5-7 minutes until the apples become soft.
- Thicken the mixture: Add cornstarch to the saucepan and continue cooking for an additional 2 minutes until the mixture thickens. Remove from heat and let the filling cool completely.
- Prepare the wrappers: Place an egg roll wrapper on a clean surface diagonally to form a diamond shape.
- Add filling: Spoon about 2 tablespoons of the cooled apple mixture onto the lower third of the wrapper.
- Fold the wrapper: Fold the bottom corner over the filling, then fold in the sides tightly around the filling.
- Roll and seal: Roll the wrapper tightly up towards the top corner and seal the edge with a dab of water to secure.
- Fry option: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the egg rolls for 2-3 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.
- Bake option: Preheat the oven to 400°F (200°C). Lightly spray the egg rolls with cooking spray and place them on a baking sheet. Bake for 15-20 minutes, turning halfway through until golden and crispy.
