 - 1 cup granulated sugar
 - 2 large eggs
 - 1 teaspoon vanilla extract
 - 1/3 cup unsweetened cocoa powder
 - 1/2 cup all-purpose flour
 - 1/4 teaspoon salt
 - 1/4 teaspoon baking powder
 - 1/2 cup mini chocolate chips (optional)
 
Instructions
- Preheat Oven and Prep Pan: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.
 - Mix Wet Ingredients: Whisk together melted butter and sugar in a mixing bowl until combined. Add eggs and vanilla extract, whisk until smooth.
 - Add Dry Ingredients: Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined; do not overmix.
 - Include Chocolate Chips: Fold in mini chocolate chips if desired.
 - Fill Muffin Pan: Spoon batter into the mini muffin pan, filling each cup about 3/4 full.
 - Bake: Bake for 12 to 15 minutes until edges are crispy and a toothpick comes out with a few moist crumbs.
 - Cool and Serve: Cool in the pan for 5 minutes before transferring to a wire rack.
