Chicken:
- 1 ½ pounds boneless, skinless chicken thighs or breasts
Feta Yogurt Mixture:
- ½ cup crumbled feta cheese
- ½ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
Panko Coating:
- 1 ½ cups panko breadcrumbs
- ½ teaspoon smoked paprika
- ½ teaspoon salt
Other:
- olive oil spray or drizzle
- ¼ cup honey
- ½ teaspoon red pepper flakes (adjust to taste)
- pinch of cayenne pepper (optional)
Hot Honey:
Instructions
- Preheat the oven: Preheat to 425°F (220°C) and line a baking sheet with parchment paper, greasing lightly.
- Mix feta mixture: Combine feta, yogurt, lemon juice, garlic, and pepper in a bowl.
- Prepare panko coating: Mix panko, paprika, and salt in a dish.
- Coat the chicken: Spread feta mixture on chicken, coat with panko.
- Bake: Place chicken on sheet, spray with oil, bake 25-30 minutes.
- Make hot honey: Heat honey, red pepper, cayenne, drizzle over chicken.
Notes
- This recipe can be made in an air fryer at 400°F for 15–18 minutes.
- Serve with rice, salad, or roasted veggies.
- For extra crunch, add crushed cornflakes to the breadcrumb mix.
