Pita Bread:

  • 2 large pita breads

Chicken & Cheese Toppings:

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, sliced

Seasonings & Garnish:

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the pita: Brush both sides of the pita breads lightly with olive oil and place them on a baking sheet. Bake for 5 minutes until slightly crisp.
  3. Add toppings: Top each pita with shredded chicken, feta, mozzarella, red onion, tomatoes, and olives. Sprinkle with oregano, garlic powder, and black pepper.
  4. Bake: Return the pitas to the oven and bake for 8 to 10 minutes, or until the cheese is melted and the pita is golden and crisp.
  5. Finish and serve: Remove from the oven, garnish with fresh parsley, and slice into wedges. Serve warm.
