Lemon Arugula Slaw:
- 1/2 cup mayonnaise

- 1 cup shredded green cabbage
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Additional:
- 8 slider buns, lightly toasted
Instructions
- Prepare Salmon Patties: In a large bowl, combine the chopped salmon, panko, egg, mayonnaise, Dijon mustard, green onions, garlic, dill, salt, and pepper. Shape into 8 small patties.
- Cook Salmon Patties: Heat olive oil in a skillet and cook the patties for 3-4 minutes per side until golden brown and cooked through.
- Make Lemon Arugula Slaw: Whisk together mayonnaise, lemon juice, and lemon zest. Toss in arugula and cabbage, season with salt and pepper.
- Assemble Sliders: Place a salmon patty on each bun, top with lemon arugula slaw, and finish with the bun top. Serve immediately.
Notes
- For extra crispiness, chill salmon patties for 20 minutes before cooking.
- You can substitute Greek yogurt for mayonnaise in the slaw for a lighter option.
