Description

These Crispy Salmon Sliders with Lemon Arugula Slaw are a delightful seafood twist on classic sliders. The crispy salmon patties are paired with a tangy lemon arugula slaw, all sandwiched between lightly toasted slider buns.

Ingredients

Scale

Salmon Patties:

  • 1 pound skinless salmon fillet, finely chopped
  • 1/4 cup panko breadcrumbs
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for cooking

Lemon Arugula Slaw:

  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cups arugula
  • 1 cup shredded green cabbage
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 8 slider buns, lightly toasted

Instructions

  1. Prepare Salmon Patties: In a large bowl, combine the chopped salmon, panko, egg, mayonnaise, Dijon mustard, green onions, garlic, dill, salt, and pepper. Shape into 8 small patties.
  2. Cook Salmon Patties: Heat olive oil in a skillet and cook the patties for 3-4 minutes per side until golden brown and cooked through.
  3. Make Lemon Arugula Slaw: Whisk together mayonnaise, lemon juice, and lemon zest. Toss in arugula and cabbage, season with salt and pepper.
  4. Assemble Sliders: Place a salmon patty on each bun, top with lemon arugula slaw, and finish with the bun top. Serve immediately.

Notes

  • For extra crispiness, chill salmon patties for 20 minutes before cooking.
  • You can substitute Greek yogurt for mayonnaise in the slaw for a lighter option.
