Yellow Onion:

Carrots:
4, peeled and cut into large chunks;
Celery Stalks:

Beef Broth:
3 cups;
Worcestershire Sauce:
1 tablespoon;
Fresh Rosemary or Dried:
2 sprigs or 1 teaspoon;
Fresh Thyme or Dried:
2 sprigs or 1/2 teaspoon
Instructions
- Season the Beef Roast: Rub the beef roast with salt, pepper, garlic powder, and onion powder.
- Sear the Roast: In a skillet, sear the roast on all sides until browned.
- Prepare the Vegetables: Place onion, carrots, celery, and potatoes in the slow cooker.
- Add Roast and Broth: Put the seared roast on top of the vegetables. Combine beef broth, tomato paste, and Worcestershire sauce; pour over the roast.
- Cook: Add rosemary and thyme. Cook on low for 8–10 hours or on high for 5–6 hours.
- Finish and Serve: Remove herbs, shred the roast slightly, and serve with vegetables and juices.
