Ingredients
Scale
Main Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 packet ranch seasoning mix (about 1 oz)
- 1 (10.5 oz) can cream of chicken soup
- ½ cup chicken broth
- 4 oz cream cheese, softened
For Serving
- 6 sandwich buns or rolls
- 1 cup shredded cheddar cheese (optional)
- 1 cup lettuce or spinach (optional)
- Sliced pickles or tomato for topping (optional)
Instructions
- Prepare the Slow Cooker: Place the boneless, skinless chicken breasts in the bottom of the slow cooker.
- Mix the Sauce: In a small bowl, whisk together the ranch seasoning packet, cream of chicken soup, and chicken broth until smooth.
- Cook the Chicken: Pour the ranch soup mixture evenly over the chicken breasts. Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is very tender and shreds easily with a fork.
- Shred and Add Cream Cheese: About 30 minutes before serving, shred the chicken directly in the slow cooker using two forks. Add the softened cream cheese and stir until fully melted and combined into the sauce.
- Thicken the Mixture: Let the shredded chicken and cream cheese cook together for another 20–30 minutes on low to slightly thicken the sauce.
- Toast Buns and Assemble: If desired, toast the sandwich buns or rolls until lightly crisp. Spoon a generous portion of the creamy ranch chicken onto each bun.
- Add Toppings and Serve: Top the chicken with shredded cheddar cheese, lettuce or spinach, and slices of pickles or tomato if using. Serve warm and enjoy your delicious sandwiches.
Notes
- You can substitute Greek yogurt or sour cream for the cream cheese for a different creamy texture.
- Add cooked bacon or sliced avocado inside the sandwich for extra flavor and richness.
- This creamy ranch chicken is versatile and also works great as a filling for wraps or served over baked potatoes.
