Cucumber Mixture:
- 1 large cucumber, peeled and chopped
- 1/4 cup fresh lime juice
- 1/4 cup simple syrup (or to taste)
Additional Ingredients:
- 1/2 cup gin
- 1 cup tonic water or soda water
- Thin cucumber slices and lime wheels for garnish (optional)
Instructions
- Blend Cucumber Mixture: In a blender, combine chopped cucumber, lime juice, and simple syrup. Blend until smooth, then strain through a fine mesh sieve into a measuring cup.
- Mix Ingredients: Stir in gin and tonic water.
- Fill Molds: Pour mixture into popsicle molds, adding a cucumber slice or lime wheel to each mold if desired.
- Freeze: Insert sticks and freeze for at least 6 hours or until solid.
Notes
- For a stronger flavor, muddle cucumber and lime together before blending.
- These pops are alcoholic, so they will melt faster than non-alcoholic popsicles.
- For a mocktail version, omit gin and increase tonic water.
