  • 1/4 cup simple syrup (or to taste)

  • 1 cup tonic water or soda water

Instructions

  1. Blend Cucumber Mixture: In a blender, combine chopped cucumber, lime juice, and simple syrup. Blend until smooth, then strain through a fine mesh sieve into a measuring cup.
  2. Mix Ingredients: Stir in gin and tonic water.
  3. Fill Molds: Pour mixture into popsicle molds, adding a cucumber slice or lime wheel to each mold if desired.
  4. Freeze: Insert sticks and freeze for at least 6 hours or until solid.
