Instructions

  1. Dice the Cucumbers: Peel the cucumbers if desired, then dice them into bite-sized pieces. Place them in a large mixing bowl.
  2. Dice the Tomatoes: Dice the tomatoes into bite-sized pieces, removing any excess seeds if preferred. Add them to the bowl with the cucumbers.
  3. Dice the Avocado: Carefully dice the avocados, removing the pit. Add the diced avocado to the bowl.
  4. Slice the Red Onion: Thinly slice the red onion. Add the sliced red onion to the bowl with the other vegetables.
  5. Chop the Cilantro (or Parsley): Chop the fresh cilantro or parsley. Add it to the bowl.
  6. Add Olive Oil and Lemon (or Lime) Juice: Drizzle the extra virgin olive oil and lemon or lime juice over the salad.
  7. Season with Salt and Pepper: Season the salad with salt and pepper to taste.
  8. Gently Toss: Gently toss all the ingredients together until they are well combined and evenly coated with the dressing.
