Ingredients

Raw Peanuts:

2 pounds

Dill Pickle Juice:

1 (32-ounce jar)

Water:

4 cups

Kosher Salt:

1/4 cup

Garlic:

4 cloves, smashed

Dill Seeds or Fresh Dill:

1 tablespoon (seeds) or 2 tablespoons (fresh)

Instructions

  1. Rinse the Peanuts: Rinse the peanuts well under cold water.
  2. Cooking: Place peanuts in a stockpot with pickle juice, water, salt, garlic, and dill. Bring to a boil, then simmer for 3–4 hours, stirring occasionally.
  3. Check for Doneness: Cook until peanuts are tender. Add more water if needed to keep peanuts submerged.
  4. Serve: Drain or serve in brine for extra flavor.

Notes

  • For a spicy kick, add jalapeño slices or red pepper flakes.
