Description

This Easy Cinnamon Roll Casserole is a delightful and comforting breakfast or brunch dish featuring soft cinnamon rolls baked with a creamy egg mixture and topped with sweet icing. Perfect for holiday mornings or weekend gatherings, it’s quick to prepare and offers a warm, indulgent treat that everyone will love.

Ingredients

Scale

Cinnamon Rolls

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing

Custard Mixture

  • 4 large eggs
  • ½ cup heavy cream (or whole milk)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup (plus more for serving, optional)

Other

  • Nonstick cooking spray

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Prepare Cinnamon Rolls: Open the cinnamon roll cans and carefully remove the rolls. Set the accompanying icing aside for later. Cut each cinnamon roll into quarters and distribute the pieces evenly in the prepared baking dish.
  3. Mix Custard: In a medium-sized bowl, whisk together the eggs, heavy cream (or milk), ground cinnamon, vanilla extract, and maple syrup until the mixture is smooth and fully combined.
  4. Assemble Casserole: Pour the egg and cinnamon mixture evenly over the cinnamon roll pieces in the baking dish, ensuring all pieces are coated with the custard.
  5. Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown and the center is set (no longer jiggly).
  6. Cool and Serve: Remove from the oven and let the casserole cool for 5 to 10 minutes. Drizzle the reserved icing over the top before serving. Optionally, serve with extra maple syrup on the side for added sweetness.

Notes

  • For added texture and flavor, sprinkle chopped pecans or walnuts over the top before baking.
  • This casserole is ideal for holiday breakfasts or weekend brunches and can be prepared the night before; simply refrigerate and bake fresh in the morning.
  • If you prefer a lighter option, substitute heavy cream with whole milk or a milk alternative.
  • Ensure not to overbake to keep the casserole soft and moist.
